UFC 102 Party Planner
Dessert time! If you love to bake, take a second and go here. The Bakerella website is porn for bakers. I used one of my favorite recipes from the site as our sweet for the UFC 102 party. I'm going to warn you ahead of time to make a crapload of these things. Whatever you think is too many, double that number. People take to these things quicker than a crack addict to the pipe, and they will go very, very quickly.
Cake Balls of Steel
Ingredients:
1 box red velvet cake mix (cook as directed on box and allow to cool)
1 (16 oz) can cream cheese frosting
1 package chocolate bark
wax paper
Instructions:
1. Crumble the cooked cake into a large bowl.
2. Using your fingers, mix thoroughly with the cream cheese frosting.
3. Roll mixture into quarter sized balls and lay on cookie sheet.
4. Chill for several hours.
5. Melt the chocolate in the microwave per package directions.
6. Roll balls in chocolate and lay on wax paper until firm.
Tips and Tricks:
- Don't melt all of the chocolate at once. It will get "goopy" quickly. Instead melt it in batches. Also, keep the cake balls chilled as long as possible. The colder they are, the less likely they are to break apart in the chocolate.
- If possible, get your chocolate at a craft store like Michael's. Their melting chocolate is really easy to use, and it will make everything go much more smoothly.
- Use a spoon or kebab stick to dip the cake ball into the melted chocolate. Regular toothpicks probably won't be strong enough.

What I really like is the thought of GSP making me some cake balls of steel and slowly feeding them to me while we watch UFC 102 at our own private party!
